Zucchini Roll Ups

Greetings, friends! I have a great way to use a couple zucchini and it was inspired by a response to a question on social media. I asked some friends and family about Meatless Monday meal suggestions, as I was tired of some of the recipes in my current rotation. Some great responses were received, but the one that stuck out the most was Zucchini Roll Ups.

Zucchini is something I always added to a pasta salad, a casserole, or baked in bread. This recipe is an easy way to change that up and is now a part of our Meatless Monday rotation.

These Zucchini Roll Ups are similar to Lasagna Roll Ups, yet lack the carbs, making them perfect for carb restrictive diets.

A mandolin slicer is highly recommended for the prep of the zucchini because the slices must be thin enough to be malleable.

Feel free to use any home made or store bought marinara. My personal store bought favorite is Victoria’s Marinara.

Zucchini Roll Ups

This healthy dinner is easy, quick, and loved by all.

Ingredients

  • 2 large zucchini
  • 2 cups frozen spinach, thawed and pat dry
  • 1 15 oz container Ricotta cheese
  • 2-3 garlic cloves, minced or pressed
  • 1 tablespoon dried basil
  • 1 1/2 cups shredded mozzarella
  • 1 1/2 cups marinara sauce, divided
  • salt and pepper to taste

Instructions

  • Wash and dry zucchini. Cut off both ends.
  • Using mandolin slicer, thinly slice whole zucchini into approximately 12-15 pieces.
  • Lay zucchini pieces flat on baking sheet. Sprinkle with kosher salt. Wait 15-20 minutes then pat dry with a paper towel. Please do not skip this step as the salt draws water out of the zucchini.
  • Preheat oven to 350.
  • While waiting for zucchini, add ricotta cheese, spinach, garlic, basil, salt, and pepper to a medium bowl and mix well.
  • Spray a 9×9 or similar baking dish with cooking spray. Pour 1/2 cup marinara in bottom of dish.
  • Spread a large spoonful of ricotta mix down each zucchini slice. Roll up, and place in baking dish, seam side down.
  • Cover with remaining marinara and mozzarella.
  • Cover with foil and bake 20 minutes, remove foil, and bake another 25 minutes. Serve immediately. Enjoy!

Notes

An addition of diced onion, diced bell pepper, shredded carrots, or finely chopped broccoli would be amazing in this dish.
