Ingredients
2largezucchini
2cupsfrozen spinach, thawed and pat dry
115 oz containerRicotta cheese
2-3garlic cloves, minced or pressed
1tablespoon dried basil
1 1/2 cupsshredded mozzarella
1 1/2cupsmarinara sauce, divided
salt and pepper to taste
Instructions
Wash and dry zucchini. Cut off both ends.
Using mandolin slicer, thinly slice whole zucchini into approximately 12-15 pieces.
Lay zucchini pieces flat on baking sheet. Sprinkle with kosher salt. Wait 15-20 minutes then pat dry with a paper towel. Please do not skip this step as the salt draws water out of the zucchini.
Preheat oven to 350.
While waiting for zucchini, add ricotta cheese, spinach, garlic, basil, salt, and pepper to a medium bowl and mix well.
Spray a 9x9 or similar baking dish with cooking spray. Pour 1/2 cup marinara in bottom of dish.
Spread a large spoonful of ricotta mix down each zucchini slice. Roll up, and place in baking dish, seam side down.
Cover with remaining marinara and mozzarella.
Cover with foil and bake 20 minutes, remove foil, and bake another 25 minutes. Serve immediately. Enjoy!
Notes
An addition of diced onion, diced bell pepper, shredded carrots, or finely chopped broccoli would be amazing in this dish.
