Ingredients
For potatoes
5-6sweet potatoes, cooked
4tablespoonsbutter, melted
1/2cuphalf and half or whole milk
1/2cupbrown sugar
1 teaspoonvanilla
1/2teaspoonsalt
1/2teaspooncinnamon
1/4teaspoonnutmeg
For topping
1/2cuprolled oats
1/2cupbrown sugar, packed
1/4cupflour
1teaspooncinnamon
1/4teaspoonnutmeg
pinchsalt
4tablespoonsbutter, melted
Instructions
To prepare the sweet potatoes, pierce with fork, rub olive oil completely over potatoes, bake in 425 degree oven for 45 minutes to an hour, depending on size. Allow to cool until manageable. In a pinch, they can be microwaved, follow same steps, except cook in microwave 6-8 minutes.
Preheat oven to 350.
Place cooked sweet potatoes in a large bowl, add all potato ingredients and mix using a hand mixer or stand mixer until smooth.
Pour into greased baking dish.
Add all topping ingredients to bowl and mix well with fork.
Cover sweet potatoes with topping, place in oven.
Bake at 350 for 35-40 minutes or until golden brown on top.
Allow to rest 10 minutes. Enjoy!
Notes
A half cup of chopped pecans would be delicious in the topping!
