Mango Salsa

This amazing salsa is perfect over shredded pork tacos!

Ingredients

  • 2 large mangos, peeled and diced
  • 1 red onion, diced
  • 2-3 roma tomatoes, diced
  • handful cilantro, diced
  • 1 jalapeno, diced (remove seeds if less heat desired)
  • juice from 1 lime
  • salt and pepper to taste

Instructions

  • Add mango, tomato, onion, cilantro, jalapeno to a medium bowl.
  • Add lime juice, salt, and pepper, stir gently to mix.
  • Cover and refrigerate for 1 hour.

Notes

Keep sealed in an air tight container up to 5 days.
