Instant Pot Cheesy Broccoli Rice

This quick side dish comes together in no time!

Ingredients

  • 1 1/2 cups long grain white rice
  • 1 1/2 cups chicken stock (can sub water)
  • 1 1/2 cups fresh broccoli florets
  • 1 cup shredded cheddar
  • salt and pepper to taste

Instructions

  • Add rice, water, broccoli florets, salt, and pepper to Instant Pot. Give a quick stir to ensure nothing is sticking to the bottom of the pot.
  • Place lid, set valve to sealing, and cook on manual pressure 12-15 minutes, depending on how "soft" you like your rice and broccoli. I usually set my timer for 14 minutes.
  • Perform a quick release.
  • Gently stir in shredded cheddar until melted. Enjoy!

Notes

No broccoli? Add chopped carrots instead. Out of cheddar? Substitute your favorite shredded cheese like Monterey Jack, Gruyere, Parmesan, Romano.
