Add rice, water, broccoli florets, salt, and pepper to Instant Pot. Give a quick stir to ensure nothing is sticking to the bottom of the pot.
Place lid, set valve to sealing, and cook on manual pressure 12-15 minutes, depending on how "soft" you like your rice and broccoli. I usually set my timer for 14 minutes.
Perform a quick release.
Gently stir in shredded cheddar until melted. Enjoy!

No broccoli? Add chopped carrots instead. Out of cheddar? Substitute your favorite shredded cheese like Monterey Jack, Gruyere, Parmesan, Romano.
