Guiltless Granola

This delicious granola makes a wonderful snack, breakfast, or anytime treat!

Ingredients

  • 1/3 cup olive oil
  • 1/4 cup pure maple syrup
  • 1/4 cup coconut sugar
  • 2 1/2 cups old fashioned rolled oats
  • 2/3 cup unsweetened coconut flakes
  • 2/3 cup chopped pecans
  • 1/2 cup pumpkin seeds, raw and preferably unsalted
  • 1/3 cup sunflower seeds, salted
  • dash of cinnamon
  • 2/3 cup dried cherries, raisins, or Crasins (optional)

Instructions

  • Preheat oven to 350.
  • Add oil, syrup, and coconut sugar to saucepan.
  • Cook over medium to medium high heat for 3 minutes or until mixture starts to boil.
  • Turn heat down to low and cook additional minute or two. The mixture will become fully incorporated.
  • Add oats to a large bowl. Pour sugar mixture over oats, coat throughly.
  • Add coconut, pecans, pumpkin seeds, sunflower seeds, and cinnamon. Stir until combined.
  • Line a rimmed baking sheet with parchment paper. Spread granola evenly in the pan.
  • Bake at 350 for 20 minutes or until golden.
  • Remove from oven and allow to fully come to room temperture before breaking apart.
  • Once a room temperature, break into large pieces and add optional dried cherries, raisins, or craisins. Enjoy!

Notes

Store in an air tight container up to 2 weeks.
This recipe will work if you would like to substitute honey or agave nectar (another of my faves) for the maple syrup, brown sugar for the coconut sugar, and shredded coconut for flaked coconut. But then it wouldn't be so "guiltless".
Feel free to add a combo of walnuts, almonds, and flax seeds to the mixture.
Salt is not added due to using salted sunflower seeds. Feel free to use unsalted sunflower seeds and add salt to taste.
Chocolate chips can also be added once completely cooled.
