Ingredients
10-15jalapenos
18 ozblock of cream cheese, softenedMay substitute lite or fat free

8 stripsbacon, cooked halfway (still wimpy as we say in my home)
Instructions
Several hours before starting recipe, place block of cream cheese on counter to fully soften at room temperature. If needed you may soften in microwave (defrost 1-2 minutes).
Precook the bacon using your preferred method. I like to bake mine in the oven at 350 for 20 minutes until it is mostly cooked, but not yet crisp. Chop into fine pieces. Leave oven on while finishing assembly.
While the bacon is cooking, wash the jalapenos in a water/vinegar solution. Chop the stems off each jalapeno, slice in half, deseed, and devein. Place on baking sheet. Wash hands very carefully after handling jalapenos so as not to transfer their hot oils into the eyes or nose. Use latex gloves if needed. Pro Tip: Rub hands over stainless steel for 10 seconds to remove odors on hands.
Place softened cream cheese and shredded cheddar in mixing bowl. Stir to combine.
Using a teaspoon measurement, fill up each jalapeno half with approximately 1-2 teaspoons of the cheese mixture.
Top with precooked bacon.
Bake in the oven at 350 for 25-35 minutes. 25 minutes if you prefer a firmer pepper, 35 minutes for a softer pepper. I usually bake mine 30-35 minutes.
Allow to rest for several minutes before serving.
Notes
I have added a tablespoon of granulated garlic to the cheese mixture for a garlicky twist! Can also garnish with chopped scallions. These will go fast, folks, enjoy!
