Covered Pork Chops

Equipment

  • 9x13 baking dish
  • large skillet or frying pan

Ingredients

  • 6 1" bone-in pork chops (can substitute boneless)
  • 2 tablespoons olive oil
  • 1/2 cup flour
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 1 can cream of mushroom soup
  • 1/2 cup water
  • 2/3 cup beef broth
  • 1 onion, sliced

Instructions

  • Preheat oven to 350.
  • Preheat skillet or pan on medium high.
  • Add 1 tablespoon olive oil.
  • Sprinkle both sides of chops with salt, pepper, and flour.
  • Place in pan and allow to sear for 2-3 minutes. Check for browning. once sufficiently browned (not burned) flip, and sear other side. I usually have to cook my chops in 2 batches. Remove and place in greased 9x13 baking dish.
  • Add 1 tablespoon olive oil in pan.
  • Add sliced onions and allow to cook for 4-5 minutes until translucent.
  • To the onions add cream of mushroom soup, water, and beef broth, mix well. Add salt and pepper to taste.
  • Pour mixture evenly over chops. Place in oven.
  • Bake at 350 for 20-25 minutes.
