Preheat oven to 350.
Preheat skillet or pan on medium high.
Add 1 tablespoon olive oil.
Sprinkle both sides of chops with salt, pepper, and flour.
Place in pan and allow to sear for 2-3 minutes. Check for browning. once sufficiently browned (not burned) flip, and sear other side. I usually have to cook my chops in 2 batches. Remove and place in greased 9x13 baking dish.
Add 1 tablespoon olive oil in pan.
Add sliced onions and allow to cook for 4-5 minutes until translucent.
To the onions add cream of mushroom soup, water, and beef broth, mix well. Add salt and pepper to taste.
Pour mixture evenly over chops. Place in oven.
Bake at 350 for 20-25 minutes.
