Banana Oat Chocolate Cookies
The combo of oats, banana, and chocolate is always a hit!

- 2 very ripe bananas, mashed
- 1 cup quick cook or old fashioned rolled oats
- 1/2 cup semi sweet chocolate chips
- 1 tsp vanilla, 1/2 tsp cinnamon, optional
Prehet oven to 350. Line a baking sheet with parchment paper.
In a medium bowl, add mashed banana, oats, and chocolate chips. Add optional cinnamon and vanilla if desired. Mix well.
Using a 1" cookie scoop or tablespoon, scoop mixture into balls and place on baking sheet. These cookies will bake in the shape they are made, meaning no spreading. I like to flatten them just a bit.
Bake for 15-20 minutes. Cool on sheet for 2 minutes then move to wire rack. Yields about 12-15 cookies.
Some other possible add in's to these cookies are shredded coconut, butterscotch chips, peanut butter chips, dried fruit, and chopped pecans or walnuts.
