I really love a good bone-in pork chop. I used to make boneless pork all the time, before I really understood how much flavor is in the bones. Now, almost all my pork chops have bones. I still buy boneless of course, because those are great in the slow cooker whenever you need shredded pork. Bone-in though, y’all, its the way to go for chops.
Let me explain a little about this recipe. My cupboards were bare, I only had one can of cream of mushroom soup, and a little beef flavored Better than Bouillon (love that stuff!). I had already stock piled some bone in pork chops from Costco, but had no other meat. Thinking how great gravy is over pork chops, I decided to utilize the few remaining ingredients I had and the result is this super easy recipe.
Feel free to play with the spices a bit. I didn’t list any in the recipe except the salt and pepper, but I usually add a teaspoon of garlic powder, and sometimes rosemary. This is classic comfort food right here, folks!
On another quick note, sometimes I like to utilize my Instant Pot if my cooktop and oven are already in use. Instant Pot Mac and Cheese is a good side dish recipe to these pork chops, as well as Instant Pot Green Beans. Mashed potatoes also go well. Your family will love this dinner!
Covered Pork Chops
Equipment
- 9×13 baking dish
- large skillet or frying pan
Ingredients
- 6 1" bone-in pork chops (can substitute boneless)
- 2 tablespoons olive oil
- 1/2 cup flour
- 2 teaspoons salt
- 2 teaspoons pepper
- 1 can cream of mushroom soup
- 1/2 cup water
- 2/3 cup beef broth
- 1 onion, sliced
Instructions
- Preheat oven to 350.
- Preheat skillet or pan on medium high.
- Add 1 tablespoon olive oil.
- Sprinkle both sides of chops with salt, pepper, and flour.
- Place in pan and allow to sear for 2-3 minutes. Check for browning. once sufficiently browned (not burned) flip, and sear other side. I usually have to cook my chops in 2 batches. Remove and place in greased 9×13 baking dish.
- Add 1 tablespoon olive oil in pan.
- Add sliced onions and allow to cook for 4-5 minutes until translucent.
- To the onions add cream of mushroom soup, water, and beef broth, mix well. Add salt and pepper to taste.
- Pour mixture evenly over chops. Place in oven.
- Bake at 350 for 20-25 minutes.
