Spicy Mexican Chicken Casserole

HI, friends! I have a great casserole recipe for you, it’s simple and delicious, and one of my family’s faves.

This casserole has a great ingredient, one that I buy specifically for this recipe- a can of chipotle peppers in adobo sauce. You guys. This stuff is heavenly! Incredibly rich and flavorful, not to mention spicy, this adobo sauce knocks this recipe out of the park.

Now because chipotle peppers and adobo sauce are spicy, I actually only use about 1-2 peppers from the can, plus an additional 2 tablespoons sauce for this recipe. A little goes a long way, but you do NOT want to skip adding it.

A word of warning: This recipe may be too spicy for younger children. To cut down on some of the spiciness, scrape out the seeds from the chipotle pepper prior to adding, and cut the amount listed in the recipe down to one tablespoon. We love spiciness in my house, so I definitely add two tablespoons, sometimes more.

I love to make a roasted chicken at least twice a month. Part of my reason for making a roasted chicken often is for the use of the leftover chicken, plus making homemade chicken stock. This recipe is perfect for using up leftover chicken, whether purchased from the store or roasted at home.

This casserole can be made ahead of time and put in the oven when you’re ready. Additionally, you can freeze this after baking in an air tight container up to three months.

Spicy Mexican Chicken Casserole

This delicious casserole can be made ahead of time for those hectic evenings.

Ingredients

  • 3/4 bag egg noodles
  • 2-3 cups shredded chicken
  • 1 can cream of chicken soup
  • 1 cup chicken stock
  • 1 can corn, drained
  • 1 can green chilies
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 2 cups shredded cheddar cheese, divided
  • 1-2 chipotle peppers from can, chopped
  • 2 tablespoons adobo sauce from can
  • salt and pepper to taste

Instructions

  • Add all ingredients except 1 cup shredded cheddar cheese to large mixing bowl. Mix well with wooden spoon. It's ok if it looks "soupy".
  • Pour into greased 9×13 casserole dish. Top with 1 cup shredded cheddar cheese.
  • Bake at 350 for 35 minutes. Allow to rest several minutes. Enjoy!
