
Sweet potatoes are so delicious, don’t you agree? I love them, they are so versatile, HEALTHY, and a great choice on many dinner menus. I always have some on hand.
This particular recipe, though, is quite indulgent. Offering a sweet treat for your taste buds, it pairs especially well with country ham. The sweet/salty combo is divine, and why I make it every time we have salty country ham.
I came up with this recipe while we were on lock down during the ‘Rona times. It was Easter, and I didn’t want to risk going to the store. I normally make a sweet potato souffle, however I didn’t have all the ingredients to make it. I did, however, have all the ingredients to turn a few sweet potatoes into this delicious version.
So while I stood starting at my pantry, the inspiration struck me. Oats. I love oats, and I remembered how delicious the apple crisp was that I had made in the fall, and decided to basically mash the potatoes with a few ingredients, cover with a delicious oat topping, and there you go, a new easy recipe was born.
My family raved about this recipe. I was really pleased, especially because my husband is not the biggest fan of the sweet stuff at dinner, but he really enjoyed it. My children scarfed it down without taking a breath!
Now it seems to me that not everyone keeps sweet potatoes in their pantries, or maybe can’t get to the store because of Corona, so as an alternative, go ahead and use those canned yams from the fall that are still in your pantry. Canned yams, though different botanically, are similar to sweet potatoes in their consistency and flavor. In challenging times, our only choices may be canned goods and dry stock. No judgement on my end! Swapping ingredients in and out of recipes is part of the joy of cooking!
This easy side is also delicious warmed up the next day. It will keep several days in an air tight container in the fridge.

Sweet Potato Crisp
Equipment
- 8×8 or similar baking dish
- large bowl
- Medium Bowl
Ingredients
For potatoes
- 5-6 sweet potatoes, cooked
- 4 tablespoons butter, melted
- 1/2 cup half and half or whole milk
- 1/2 cup brown sugar
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
For topping
- 1/2 cup rolled oats
- 1/2 cup brown sugar, packed
- 1/4 cup flour
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- pinch salt
- 4 tablespoons butter, melted
Instructions
- To prepare the sweet potatoes, pierce with fork, rub olive oil completely over potatoes, bake in 425 degree oven for 45 minutes to an hour, depending on size. Allow to cool until manageable. In a pinch, they can be microwaved, follow same steps, except cook in microwave 6-8 minutes.
- Preheat oven to 350.
- Place cooked sweet potatoes in a large bowl, add all potato ingredients and mix using a hand mixer or stand mixer until smooth.
- Pour into greased baking dish.
- Add all topping ingredients to bowl and mix well with fork.
- Cover sweet potatoes with topping, place in oven.
- Bake at 350 for 35-40 minutes or until golden brown on top.
- Allow to rest 10 minutes. Enjoy!
