Hi, friends! I’m here to remind you of a great potato hack I learned a while back. Roasted potato peels! That’s right, after peeling your potatoes, dry them out, add seasonings and roast for a bit. The result is a delicious and satisfying snack!
Did you know that the skin of the potato is a great source of iron? One whole baked potato gives men 57 percent and women 25 percent of their recommended daily intake of iron, but the skin alone provides 88 percent of the total amount.
The skins are also rich in other minerals such a potassium and magnesium. There’s also several grams of fiber. So really, you’re eating a healthy snack!
I also love the fact that I’m using every bit of the potato, and not throwing anything away. Waste not, want not, as the saying goes. I also recommend composting your potato peels if you don’t care to roast them. Here’s an article that can explain that further.
Another great thing about roasting the peels is that you can make any flavor combo you’d like. I love adding garlic of course, but really any spices will work. Rosemary and garlic is one of my favorite combos.
Kids love these, by the way. In fact, my children are the ones who season these and bake them while I’m doing other things.
The steps are simple, enjoy!
Roasted Potato Peels
- Preheat oven to 425.
- Dry peels with a paper towel, place on GREASED, rimmed baking sheet.
- Sprinkle with 2 tablespoons EVOO.
- Sprinkle desired seasonings, always include salt and pepper.
- Mix well, spread into single layer on baking sheet.
- Bake for 25 minutes. Adjust baking time to your taste if necessary.
