I love my Instant Pot! At first, my skepticism almost got the best of me, but I purchased mine from Amazon when they were half off a couple years ago. It has really been such a great kitchen tool and I highly recommend one for every kitchen.
This is honestly one of my favorite sides to make in the Instant Pot (IP). Not only do my kids love green beans anyways, but using the IP frees up my oven and stove for other things.
This is more of a country style green bean dish. The long time in the IP is what ensures the great texture of these beans. Sometimes I add or omit onions and white potatoes for a more robust side. There are definitely days where I need a recipe to act as two sides!
I almost always use chicken stock for the liquid in this recipe. I have used vegetable broth as well, with delicious results, but my favorite is chicken. May I recommend Better Than Bouillon? I’ve been using it for years and it’s my favorite replacement for homemade stock.
The addition of bacon is likewise not to be omitted. Bacon and green beans is a classic country combo, and here it gives the right amount of smokey-bacon flavor. We use a bourbon infused bacon made by our local country store and it’s fantastic!
We made this side to accompany a grilled top round steak and a salad. Tried and true family favorite for sure! Try them and let me know what you think!
