Hi, folks! Who doesn’t love an easy and refreshing side dish? I have a great, super simple, and delicious side dish for all your summer dinners.

This Easy Greek Salad is full of fresh ingredients that are universally loved. Cucumbers, tomatoes, onions, and olives marinating in the dressing, and topped with the ever wonderful feta cheese.

I can’t tell you how much I love feta. I use it every chance I get. In fact, I love most cheeses. Feta is one of those ingredients, though, that is practically required in any Mediterranean and Greek dishes. Feta is also a very healthy cheese, providing several vitamins and minerals for our bodies. Please do not skip using this worldwide favorite!

Sometimes I serve this salad alongside a medium rare steak, and it’s all I need for dinner that night. That and maybe a Better Baked Potato.

Because cucumbers and tomatoes can become soggy after sitting in the dressing too long, I recommend making this the day you’re planning on serving it.

Easy Greek Salad

This summer side dish is easy, refreshing, and satisfying!

Ingredients

  • 1 english cucumber, diced. Approx 2 cups
  • 1 cup grape tomatoes, halved
  • 1 can sliced black olives (any size can)
  • 1/2 red onion, diced
  • 3-4 tablespoons Italian or greek dressing
  • 1/2 cup crumbled feta
  • salt and pepper to taste

Instructions

  • Combine all ingredients in medium bowl. Refrigerate until ready to serve.
