
This is a recipe I have tweaked to my liking over the years. It’s a delicious, hearty, comforting meal that’s perfect for busy week nights or cold evenings.
The slow cooker is such a friend of mine, LOL! I absolutely love my slow cooker, even more than my Instant Pot. And I NEVER use my slow cooker without liners. Clean up is always a breeze, thankfully! You can find them here.
How easy is it to throw everything in your slow cooker in the morning and have a delicious meal waiting for you at dinnertime? I love the ease of this recipe, and its one of my family’s favorites.
This chowder will keep for several days in an air tight container in the fridge. Also, feel free to freeze for later use. I usually ladle soup into a freezer safe ziploc bag so it can store flat in my freezer.
Slow Cooker Ham, Potato, Corn Chowder
Equipment
- Slow cooker, lined
Ingredients
- 1 onion, diced
- 3 cloves garlic, pressed or minced
- 2 cups ham, diced
- 5-6 potatoes, diced 1" cubes
- 1 can corn, drained (can sub with fresh or frozen)
- 4 cups chicken broth
- 1/4 cup flour
- 1 1/2 cups heavy cream (can sub half and half)
- dash thyme
- salt and pepper to taste
Instructions
- Add onion, garlic, ham, potatoes, corn, chicken broth, and spices to slow cooker.
- Cook on low 7-8 hours, or on high for 4 hours.
- Whisk flour and heavy cream together, add to slow cooker. Cook an additional 20 minutes on high.
