1-1-1 Peanut Butter Cookies

If you have a family of peanut butter lovers like mine and you don’t have this recipe memorized, then I’ve come to rescue you!

I call them 1-1-1 Peanut Butter Cookies because it makes it easy to recall the recipe without having to actually look it up. 1 cup PB, 1 cup sugar, 1 egg. That’s it!

It is seriously the easiest cookie in my repertoire. Can’t go wrong with just three ingredients, trust me. We whip these up so often that even my kids have it memorized. They make a great after school snack, really an anytime snack.

This is my favorite, simple, flour less peanut butter cookie recipe. It’s actually on my list of my 10 Best Christmas cookies, but I have given a plate of these regularly as gifts year round. Love them so much!

I highly recommend using an air insulated cookie sheet and a cookie spatula when baking most types of cookies. I have never needed to use a silicone baking mat or parchment paper for cookies when I’ve used my air insulated cookie sheets, and I’ve been using them for decades. The cookie spatula makes such a difference, trust me on this, folks. It’s super skinny edge makes it the perfect tool for cookie removal.

I don’t think I will ever go back to regular, full of flour, peanut butter cookies again. By the way, we eat these warm right out of the oven. It’s the cookie I want in heaven, guys. Pure peanut butter bliss! Enjoy!

1-1-1 Peanut Butter Cookies

These amazing cookies are the perfect snack for that peanut butter punch!

Equipment

  • baking sheet
  • cookie spatula
  • hand or stand mixer
  • cooling rack

Ingredients

  • 1 cup peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract (optional)

Instructions

  • Preheat oven to 350.
  • Add all ingredients to mixing bowl of stand mixer or hand mixer. Mix well, scraping down sides of bowl if needed.
  • Using a 1" or 1 1/2" cookie scoop, scoop dough into balls, place evenly spaced on baking sheet.
  • Using a fork dipped in sugar, press down, turn, then down again to make a criss cross shape on each cookie.
  • Bake in oven approximately 10 minutes.
  • Allow to rest on cookie sheet for a couple minutes. Transfer to wire rack to cool.

Notes

Yield approx 12-15 cookies.
