Amazingly Delicious Chicken Soup

I can’t tell you how much I love this soup. Perfect for a cold day, or an under the weather day, this soup will soothe the soul. It’s the addition of turmeric that makes it so wonderfully good. Enjoy!

Amazingly Delicious Chicken Soup

Equipment

  • Large pot or dutch oven
  • wooden spoon

Ingredients

  • 1 tablespoon olive oil
  • 6 cloves garlic, pressed or minced
  • 1/2 large onion, diced
  • 1 1/2 cups carrots, chopped
  • 2 ribs of celery, diced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground turmeric
  • 6 cups chicken broth
  • 2 chicken breasts, cut into 4-5 pieces can substitute 1 can chicken
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon kosher salt
  • ground pepper, to taste
  • 1/2 cup frozen peas

Instructions

  • Place a large pot or dutch oven on medium high heat on the stove. Add oil, allow to heat for 1-2 minutes
  • Add onions, carrots, and celery. Allow to cook for 4-5 minutes until onions become translucent.
  • Add in ginger and turmeric, saute for 2-3 minutes. This helps the flavors "bloom".
  • Add in chicken broth, chicken (fresh or canned), rosemary, thyme, salt, and pepper.
  • Simmer over medium to medium low heat for 25-30 minutes. We do not want a rolling boil, just a gentle simmer.
  • Pull pieces of fresh chicken out and shred with two forks, return to pot. Skip this if using canned chicken.
  • Add frozen peas and cook additional 3-5 minutes.
  • Taste and adjust for seasonings if necessary. Enjoy!

Notes

Pasta is great to add more bulk to this soup. Orzo, ditalini, cous cous, egg noodles, or even elbow noodles could be added to this soup. Add pasta the last 7-10 minutes of cooking time for best results.
If you have fresh herbs, use them! Many people I know don’t always have fresh herbs around, but if you do, use those instead.
A handful of my Ranch and Parm Oyster Crackers goes well with this soup!
