A simple stove top recipe, this easy dessert (or snack) is a make ahead dream!
Only a few ingredients necessary for this recipe, the main ones being oats, chocolate chips, and peanut butter.
No Bake Chocolate Oat Bars are perfect for summer, when you don’t want to turn on the oven. Really, they’re perfect anytime! A great recipe for parties and pot lucks, too!
Another plus? They freeze incredibly well! While they do need a few hours to cool, they store beautifully in the fridge and freezer. Just stack some parchment paper between the layers and store in the fridge for 10 days, the freezer for several months. Bring back to room temp before serving. Enjoy!

No Bake Chocolate Oat Bars
Ingredients
- 1 cup salted butter (2 sticks)
- 1/2 cup brown sugar
- 3 cups rolled oats
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 1 cup chocolate chips (semi sweet preferred)
- 3/4 cup peanut butter (smooth or crunchy, either works)
Instructions
- Line 8×8 baking dish with parchment paper, set aside.
- In a medium saucepan, add butter, brown sugar, and vanilla extract. Stir over medium low heat until butter is melted and sugar is dissolved.
- Add oats, cinnamon, and salt. Stirring constantly, allow mixture to cook for about 4 minutes.
- Add half of the oat mixture to parchment lined baking dish. Spread and press evenly to the edges.
- In a small microwavable bowl, add chocolate chips and peanut butter. Microwave on high for 30 seconds, stir. Repeat the process until the chocolate and peanut butter mixture is melted and smooth.
- Pour about 3/4 of the chocolate peanut butter mixture over the oats and spread evenly.
- Top with remaining oats, again spreading evenly. Drizzle the remaining chocolate peanut mixture over the top.
- Refrigerate for four hours or until set.
